A good way to make the sponge cake healthier is to replace the fats with a good Extra Virgin Olive Oil, in this case it will be “Mrs.” Premium Organic Oil. This gives it a touch of flavor that is wonderful with the lemon.
– 3 eggs
– 1 Greek yogurt (we will use it as a measuring cup)
– 2 doses of sugar
– 1 sachet of yeast powder
– 1 pinch of salt
– 1 dose of “Madame” Premium Organic Oil
– Zest of a lemon (Miss Tonic)
While the oven is preheating to 180º, beat the eggs and add the yogurt, sugar, olive oil and lemon zest, mix and blend.
Sift the flour, mix it with the yeast and salt. Add to the above.
Put in a mold and bake for 40 minutes at 180º.
Once cooled, you can add powdered sugar on top.
